  • 4 medium zucchinis
  • 1 tablespoon olive oil

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

  8. Place the zucchini boats in a baking dish and fill each one with the meat and vegetable mixture.
  9. Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the filling is golden brown on top.
