Exquisite Quinoa Tabbouleh: A Refreshing and Nutritious Mediterranean Salad
Quinoa Tabbouleh is a delightful twist on the traditional Middle Eastern salad, using nutritious quinoa instead of the usual bulgur wheat. Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1/4 teaspoon salt
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup chopped green onions
- 1 cup diced tomatoes
- 1 cucumber, diced
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Combine the quinoa, water, and 1/4 teaspoon of salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook until the quinoa has absorbed all the water, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and let cool completely.
