Ingredients:

For the Stuffed Squash:

  • 2 medium acorn or butternut squashes, halved and seeded
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup fresh spinach, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans
